No Sodium Recipes for National Nutrition Month



Doesn't that look so yum!! QUINOA AND CARROT SALAD - just the sound of that sounds amazing.  I can't wait to try it!  That is def going to be on my dinner list for the upcoming week! But  there's so much more to healthy nutrition than meets the eye – proper nutrition comes down to the right serving size, eating foods naturally rich in fiber, vitamins and minerals, the right amount of protein and keeping your sugar and sodium in-take in check. In honor of March's National Nutrition Month, arm yourself with the right knowledge and recipes for life (not just the month). Something I am learning along the way as well!
I've included several of his healthy and easy recipes below:

QUINOA AND CARROT SALAD (above) created by Executive Chef at Pritikin Longevity Center + Spa, Anthony Stewart.
Serves 4 to 6
  • ¾ cup uncooked quinoa
  • 1 cup carrots, shredded
  • 1 teaspoon garlic, finely chopped
  • 1 teaspoon onion, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon fresh mint, finely chopped
  • 2 tablespoons orange juice (or more, if desired)
  • ½ seedless cucumber, chopped (optional)
Bring quinoa and 1-1/2 cups water to a boil in a medium saucepan. Reduce heat to low, and cover and simmer until tender and most of the liquid has been absorbed, about 15 minutes. Fluff with a fork.  Let cool.
In a medium bowl, combine quinoa, carrots, garlic, and onion.
Add oregano, mint, and orange juice.
Add cucumber, if desired.
Toss to combine.


SEARED SALMON WITH BLUEBERRIES AND QUINOA 
Serves 4
  • ¾ cup uncooked quinoa
  • ½ cup balsamic vinegar
  • 2 cups fresh blueberries
  • 4 four-ounce salmon fillets
Pre-heat grill to medium-high heat.
Bring quinoa and 1-1/2 cups water to a boil in a medium saucepan. Reduce heat to low, and cover and simmer until tender and most of the liquid has been absorbed, about 15 minutes.
While quinoa is simmering, pour balsamic vinegar and blueberries into a small saucepan.  Bring to boil on the stove.  Reduce heat and stir regularly under mixture is reduced by half, about 10 minutes.   Remove from heat.
To grill salmon, place your fillets on grill rack lighted misted with oil spray, and directly over coals.  Grill, uncovered, for 4 to 6 minutes per 1/2-inch thickness, or until fish begins to flake when tested with a fork. Turn the fish once halfway through grilling.
If your fillets still have skin, remove the skin after grilling.
On 4 individual plates, divide quinoa.  Top with salmon.  Top salmon with blueberry sauce.  Garnish each plate, if desired, with a few fresh blueberries.


SWEET POTATO & APPLE SALAD  - Simple and refreshing!
Serves 10
  • 5 cups sweet potato, diced and cooked
  • 2 cups apple, diced
  • 1 tablespoon lemon juice
  • 8 ounces fat-free sour cream
  • ½ teaspoon cinnamon
  • 1 tablespoon apple juice concentrate
  • ½ tablespoon vanilla extract
Mix all ingredients well in a bowl.  Refrigerate for 30 minutes.
Garnish with pineapple leaves and sliced fresh strawberries


NEPTUNE CHEESECAKE 
SERVES: 12
  • 1# fat free cream cheese
  • 2 oz fat free ricotta cheese
  • 2 C roasted pumpkin (pureed)
  • ½ C Splenda
  • 3 oz silken tofu
  • 1 t vanilla extract
  • ¼ c egg white
  • ½ t lemon rind
  • 1 t lemon juice
  • 1 t cream tartar
  • ¼ tsp Xanthan gum
  • ¼ c Silk vanilla soya milk
  • 2 Asian sliced very thin and cooked in apple juice  and ginger for two minutes
PROCEDURES
  • In a food processor or cake mixer, mix cream cheese and half the amount of Splenda until creamy.
  • In a food processor blend tofu and ricotta cheese, with remaining Splenda and xantham gum until smooth.
  • Add tofu mixture to cream cheese mixture mixing on low speed. Add all other ingredients except cooked Asian pear and pumpkin and mix well.
  • Divide the mixture into two halves. Add pumpkin puree to one half of the mixture and mix well.
  • In a lightly grease pie dish layer with asian pear slices then pour pumpkin cheese cake  mixture, add a layer of Asian pear them pour regular cheese cake mixture
  • Bake in hot water bath at 350 degrees for 10 minutes, and then reduce to 275 degrees for 25 minutes.

Who doesn't love ice cream, right?!?   The temps here in Vegas are warming up, we've even had a couple days near 80! I have a feeling that Vegas is gearing up for a early and very hot summer.  But honestly, why wait until it's 115 outside to enjoy some nice cold ice cream, especially from Baskin-Robbins.  You'll especially want to run to Baskin-Robbins soon, I mean real soon.....they have a new Donut Ice Cream Sandwich that they are testing exclusively to the Las Vegas area for a limited time.  In the picture above it is the product in the pictures on the left hand side.  The picture honestly does not do justice.  The donut itself is so fresh and soft, it's such a great combo paired with your favorite flavor ice cream and will really go with just about any flavor! I took my two kids with me as who else better to taste some yummy treats!  The Donut Ice Cream Sandwich was a huge hit!  While it is messy, it topped the list and is something I hope sticks around and become a permanent menu item.

Their second new and might I add permanent menu item is their Warm Cookie Ice Cream Sandwiches and Sundaes.  The cookies are nice and soft once warmed up and taste just like the cookies that comes out of your mom's oven!  The Cookie Ice Cream Sandwich I'll say is a messy one, I highly recommend getting it in a cup and breaking up the cookie with your spoon while it's still warm.  The cold from the ice cream did harden up the cookies, but if you break it up first then mix it with your ice cream, you're in for a yummy treat!  You can pick any two cookie flavors you want, any topping and of course your favorite ice cream! It was def good, reminded me of when I was a kid being at grandma's house and she would make us ice cream sandwiches.

Announcement


So for a while now, both my kids have been asking to join in on the fun here.   We've talked about it quite a bit and thought about what is missing here in Vegas.  After doing some research, we decided to venture out and start a second site called Kids Do Vegas!  There are a ton of sites that cater to the younger crowed, babies and toddlers - but what about the 10+ crowd?  That is where my kids come in - they will be on scene "reporters" bringing you fun things to do, places to eat, shows to see and much more geared toward the 10+ crowd.

Now while the site is in the works, we are hoping to have it up in about a month or so - we have opened up a few social media accounts to get the buzz started!  Here is a short introduction as well as links to follow us along the way!  We will still be running Hula Hooping Mom as well, this will just be an addition.

CUT. IT. OUT. The Fuller House trailer is almost here!! The Fuller House cast goes back home this Friday, February 26 in all territories where Netflix is available.

Our whole family is so excited and much looking forward to this weekend! Finally....it's here, debuting this Friday, the 26th on Netfilx - Fuller House! My husband and I watched this in our younger days. My kids will even watch the original Full House on Netflix. It's a good, family oriented show suited for everyone. I love that this is something the whole family can watch and look forward to. Watching the trailer put a smile on my face, brings back memories and builds the excitement for Friday. If you've never seen the original, I highly recommend catching some of the original episodes. It's exciting and fun to see the same characters years later!
